P2V, CPUs, and Windows

I ahve a bunch of physical servers which I want to convert to ESX VMs using converter.  The physical servers have either 1 CPU with hyperthreading or 2 CPUs with hyperthreading.  So, when I convert the servers, they end up as 2 vCPU VMs or 4 vCPU VMs.

There seems to be a lot of discussion on the ESX forums around changing the CPU count, modifying the Windows HAL, etc.  Is there a supported way using converter (or through the P2V process) to take a 4 CPU physical server and convert it to a single vCPU VM?
